- Heat the oil in a pan (with a lid for later). Add the cumin seeds.
- When the cumin seeds start to pop, add the onion. Cook until the onion softens.
- Add the garlic, ginger, chilli and spices. Season. Cook for a few minutes.
- Add the potatoes and most of the carrot tops. And 1 cup of water. Stir well. Put the lid on and simmer for about 10 mins. Add more water if it starts to dry out.
- Add the carrots and 1/4 cup of water. Cover again and cook for 3-5 minutes until everything is tender.
- Take off the heat. Stir in a tsp more ghee/ butter and the spinach and the rest of the carrot tops.
- Serve with a garnish of chilli/ coriander leaves/ more carrot tops π₯ Enjoy π
