A Monday recipe for us, my. i have posted quite a few aloo or potato-based curry recipes, but this recipe should be one of the popular one. the main reason being the underline gravy sauce or tomato sauce which uplifts the taste and flavour of this recipe. i personally like my curry to have a thick and spicy gravy in it. even though. This vegetarian recipe for Indian bell pepper, tomato, and potato curry is a colorful main dish that can be as spicy or as mild as you like. Instructions to make Potato and Tomato Curry:
  1. Blend the tomatoes in a blender and set aside. In a pan, heat til oil. Add green bell pepper cubes and stir fry for 2 minutes on medium high heat. Remove and keep aside.
  2. In the same pan, add more til oil. Add mustard seeds, cumin seeds and asafoetida. Allow the seeds to splutter.
  3. Add green chillies and curry leaves and saute for a minute.
  4. Add turmeric powder, cumin powder, kitchen king masala, chilli powder and coriander powder and saute for a minute.
  5. To this add potatoes and hot water and let it come to a boil. Cover with lid and cook till potatoes are cooked. (Alternatively, you can cook it in a pressure cooker)
  6. Add the stir fried green bell peppers, coriander leaves and lemon juice and saute for a minute.
  7. Garnish again with coriander leaves and green chillies
  8. Relish it either with Rotis, Puris, Rice etc
