- Half Boil the potatoes and cut them into long pieces like the fries.
- Dust them with maida, rice flour and a bit of oil.
- Mix Maida, Rice flour salt and water to make a nice batter.
- Coat the dusted potatoes with the batter generously and fry them once in hot oil until golden brown.
- Fry the potatoes for the second time so that the potato strips become crisp.
