  1. Make ready 3 cups parboiled rice
  2. Get 1 cup urad dal
  3. Prepare 1 tsp methi or fenugreek seeds
  4. Take 1 tbsp salt

Healthy stuffing makes idli more healthier than the normal idlis. Am sure all idli fans would love to have this idli. i made the stuffing bit spicy so that we no need any special chutney or sambar is not required to try this. Idli sandwich, is a simple tiffin or starter made with idli batter and potato stuffing. I have already given the recipe of stuffed idli in my second cook book, Kutties kitchen.

Steps to make Idly sandwich or stuffed masala idli:
  1. Soak rice, dal & methi seeds in water for 6 hrs & grind into a fine thick batter. Add salt & allow it to ferment for 8-10hrs. Batter is ready.
  2. For stuffing. Cut 2 potatoes into small cube & boil untill it's soft & tender. Mash it well & keep it aside. In a pan heat oil & add mustard, urad dal, finely chopped onion, green chilli salt & turmeric. when it turns golden brown add mashed potatoes & mix it well with lil salt. Masala is ready.
  3. Pour 1tbsp of batter into each mold & place flattened masala & pot 2-3tbsp of batter to cover the filling. Now steam it for 10-15 mins & steam it.
  4. Idly sandwich is ready. Enjoy!!

I wanted to post the recipe in Jeyashri's kitchen too and tried this morning. After i finished making this, i had this thought of smearing the idlis with molaga podi. After a lipsmacking sandwich, i want to dish out a different dish with Idli/dosa batter, hence i opted for a baking dish with the same usual idly batter. To make this idli muffins more interesting i opted for a lipsmacking and nutritious rajma masala. Idli sandwich recipe using leftover idlis and vegetable stuffing.
