- Boil the vermicelli in a hot bowl of water until they are soft. Drain. I like to cut the vermicelli to smaller length pieces. Set aside
- With oil, quickly pan fry the prawns till it is cooked. Set aside
- With oil, drop in the garlic, then the pepper and meat and cook for a little bit. Add a bit of water when the oil has dried up before dropping the vermicelli into the mix so the vermicelli will not stick to the pan.
- The vermicelli in the pan should be wet. Add in all the seasonings and blend over medium heat. You should cover it with a lid for about 3 minutes. If there is not enough water, add more to allow it to be cooked for at least 3 minutes.
- After opening the lid, drop in the prawns for a final mixture. When the vermicelli leaves the pan, it should be slightly damp, but not running with water. If the noodles is too wet, just cook it a bit longer before serving it on a plate.
Transfer the rice noodles to a colander to drain. Plate the warm grilled pork on top of the bowl, alongside with the pickled veggies and cilantro. Brush the meat with the scallion oil and sprinkle with the crushed peanuts.
