The ingredients needed to make Chicken Seekh Kebab:
  1. Prepare 500 gms boneless tender chicken
  2. Make ready 2 medium sized Onion chopped
  3. Make ready 1 teaspoon Ginger-Garlic paste

  5. Get 1 bunch chopped Coriander leaves
  6. Get 1 tablespoon Besan/Chick pea flour
  7. Prepare 1 teaspoon Kashmiri red chilli powder
  8. Make ready 1 teaspoon Chat masala
  9. Get 1/2 teaspoon crushed black pepper
  10. Make ready 1/2 teaspoon Garam masala powder
  11. Take 1 tablespoon fresh cream
  12. Take 5-6 Cashew crushed
  13. Get 1 tablespoon Ghee
  14. Get 1 teaspoon Mustard oil
  15. Get to taste Salt

This Chicken Seekh Kebab recipe is a crowd pleaser and is inspired by my uncle who marinated and barbecued these delicious kabab Eid after Eid and cherished the festival. Chicken Seekh Kabab are a delicious Indian appetizer made with ground minced meat & a handful of spices and are usually served with a side of green chutney. Transfer the Chicken Seekh Kebab mixture into a bowl. Once done we will coal smoke the sheek kebab mixture.

Instructions to make Chicken Seekh Kebab:
  1. Take 500 g of boneless chicken and cut them in small pieces.
  2. Take a food processor or mincer and place chicken pieces, chopped onion, ginger-garlic paste, chopped green chillies, chopped coriander, crushed cashews, all the spices, besan, cream and salt.
  3. Mince all the ingredients together to make a smooth paste.
  4. Keep aside the paste for about half an hour so that all the flavours incorporate well to the minced meat.
  5. Grease your hand with little oil. Take a handful of the kebab mixture and place it on a satay stick or seek with your hand as shown in the picture. Press the mixture around the stick to shape it in the form of a log.
  6. Similarly make all the kebab logs and try to give some thumb impression to bring the authentic kebab shape.
  7. Heat a griddle/Tawa with a teaspoon of mustard oil.
  8. Place the satay sticks or seeks to the hot Tawa and cook in high heat at first 3-4 minutes. Rotate the sticks in between.
  9. Then reduce the heat so that the kebabs cook from inside also. Rotate and press the kebabs with a spatula. Bust with few drops of ghee in between.
  10. In the meantime heat a piece of charcoal in the open flame.
  11. Place an aluminium foil in the Tawa when the kebabs are almost done. Put the burning charcoal in the foil and immediately add in 1/2 teaspoon of ghee.
  12. Add in 1/2 teaspoon of ghee on the burning charcoal. Smoke starts to emit.
  13. Immediately cover the griddle/Tawa with a lid so that smoke infuse to the kebabs and the kebabs will have a wonderful smoky flavour as like restaurant kebabs.
  14. After a minute remove the lid and your kebabs are ready. Transfer them to a dish.
  15. Repeat the process and cook all the kebabs. Note that you don't overcook the kebabs. Overcooking will make them dry form inside.
  16. Gently slide each kebab from the stick and serve them hot with your favourite chutney or raita. They are juicy from inside full of flavours.
