- Parboil yam for about 5 to 7 minutes, drain the water and run cold water over the yam to stop the cooking process then set aside to cool off
- Add milk into the whisked egg, add pepper, onion, garlic, dry herbs and salt, flour then mix everything together, if the consistency is too thick, add a little water till you get the right consistency then finally add green bell pepper
- Heat up a shallow pot and add veg oil for frying. Once itβs hot you can start frying. Get another plate and add the remaining 1/2cup flour, spice to flour to your desire taste or leave it plain,
- Dust your yam into the plain flour then dip it into the batter and then fry. Turn to the other side after 3 to 4 minutes and do the same till itβs golden brown, remove from heat and complete the same method for the remaining batch
- Serve with any sauce of your choice but for me I served mine with our homemade sweet chili jam
- I had some batter left, so I decided to fry the batter and enjoy it with the sweet chilli jam and it was ππ
Check your yam by putting your fork in the yam. If it goes through then it's soft enough, remove from the fire and drain the water to stop the cooking process. Peel and slice the yam in rectangular shapes fit for frying then wash them with clean water. Take a couple slices of yam and soak it in the beaten eggs and make sure it really soaks in.
