Steps to make Vitumbua trial:

- Add the rice,the suger and a cup of water.blend by blitzing bit by bit…then see consistancy.then add the coconut powder and half cup water.blend again(here i did not add water at that point and also the rice did not smoothen to slallest pieces as needed.this is very important step to ensure soft and fluffy vitumbua
- As in pic this was consistancy obtained which wzs still larger pieces of rice grains
- Cover let rise abt half hour see pic on progression (upper layer)
- At the top,frothy means its ready alhamdulillah
- Using the special kitumbua pan which has the hollow rounds,place it on the electric or gas cooker(flat syrface works best or one that the pan will fit well to avoid accidents.
- Put about half a table spoon of oil in each hollow,and heat thru.Then pour in each hollows some of the mixture rice,filling about third way up.and cook until the bubles appear and oil comes to top edges(see pic)then can turn over ising edges of spoon..sometimes the kitumbua sticks so just more scrapeing of edges
- Do with all of the remaining mixture..the centre is now soft and fluffy and surface is crispy and has dark spots around it, thats shiws its cooked well.bismillah enjoy with favourate tea.
